Instructions

  1. Heat Olive Oil and Cook Vegetables and Apples: Pour 1 tablespoon of olive oil into a large pot and heat it over medium stove top heat. Add the diced apples, sliced sweet potatoes, and sliced carrots to the pot. Sprinkle with 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon salt, 1/2 teaspoon pepper, 1 teaspoon rubbed sage, 1/2 teaspoon cinnamon, and a sprinkle of nutmeg. Stir well with a spatula and cook for about 5 minutes, stirring occasionally to soften the vegetables while allowing the flavors to meld.
  2. Add and Cook Ground Turkey: Add the ground lean turkey to the pot. Break it up into smaller pieces using a spatula or wooden spoon. Cook the turkey for 5 to 7 minutes, stirring frequently until the meat is fully cooked and no longer pink.
  3. Add Tomato Paste and Spices: Stir in 3 tablespoons tomato paste, 2 teaspoons chili powder, 1/2 teaspoon rubbed sage, and the remaining 1 teaspoon salt. Mix thoroughly to ensure the tomato paste is evenly distributed throughout the mixture, enhancing the chili’s depth of flavor.
  4. Add Tomatoes: Pour in 3 cups crushed tomatoes and 2 cups strained tomatoes (or marinara sauce). Stir well to combine all ingredients evenly.
  5. Simmer the Chili: Reduce the heat to low-medium and allow the chili to cook gently for 20 to 30 minutes. This slow simmer allows the flavors to develop further and the vegetables to become tender.
  6. Add Kidney Beans (Optional): If using kidney beans, stir them in toward the end of the cooking time, just before serving, to heat through without becoming mushy.
