Ingredients

Scale

Dairy and Creams

  • 8 ounces cream cheese (softened)
  • ⅔ cup sour cream
  • ⅓ cup mayonnaise
  • 1 ½ cups shredded mozzarella cheese (divided)
  • ½ cup shredded Parmesan cheese
  • ½ cup shredded Gruyere cheese (or gouda or Swiss cheese)

Vegetables and Aromatics

  • 2 cloves garlic (minced)
  • 10 ounces frozen chopped spinach (thawed and squeezed dry)
  • 14 ounces marinated artichoke hearts (drained and chopped)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the dip.
  2. Mix Cream Base: In a medium bowl, add the softened cream cheese, sour cream, mayonnaise, and minced garlic. Use a hand mixer on medium speed to beat the mixture until it becomes fluffy and smooth.
  3. Combine Ingredients: Gently fold in the shredded Parmesan cheese, 1 cup of the mozzarella cheese, shredded Gruyere cheese, thawed and squeezed spinach, and chopped marinated artichoke hearts. Make sure everything is well incorporated without overmixing.
  4. Prepare for Baking: Spread the prepared mixture evenly into a 9×9-inch casserole dish or a deep dish pie plate. Sprinkle the remaining ½ cup of mozzarella cheese evenly over the top.
  5. Bake: Place the casserole dish in the preheated oven and bake for 25 to 30 minutes, or until the dip is bubbly and the cheese on top is golden brown.
  6. Rest and Serve: Let the dip rest for 10 minutes after baking to thicken slightly. Serve warm with tortilla chips, baguette slices, crackers, or fresh vegetables for dipping.

Notes

  • For best results, thoroughly squeeze the thawed spinach to remove excess water to prevent a watery dip.
  • You can substitute Gruyere with gouda or Swiss cheese depending on your preference.
  • Marinated artichoke hearts add extra flavor, but you can use plain canned artichokes as an alternative.
  • This dip can be made ahead of time and refrigerated; bake just before serving.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
