Instructions

  1. Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add diced onion, minced garlic, and diced jalapeños. Sauté until softened and fragrant, about 5 minutes.
  2. Add Broth and Simmer: Pour in the chicken or vegetable broth and bring the mixture to a simmer.
  3. Prepare Cheese Mixture: In a bowl, whisk together the softened cream cheese, milk, and 1 cup of shredded cheddar cheese until the mixture is smooth and creamy.
  4. Combine Mixture with Broth: Slowly stir the cream cheese mixture into the simmering broth, blending thoroughly to create a creamy soup base.
  5. Season and Simmer: Add salt and pepper to taste. Continue to simmer the soup for 10 minutes, stirring occasionally to prevent sticking and to let flavors meld.
  6. Make Grilled Cheese Dippers: While the soup simmers, butter each slice of bread. Layer the remaining cheddar cheese on 4 slices, then top with the other 4 slices to make sandwiches.
