Ingredients

Scale

Vegetables

  • 6 cups peeled and diced potatoes
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped (any color)
  • 2 celery stalks, diced

Spices & Seasonings

  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun seasoning (more to taste)
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Liquids & Fats

  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 1 tablespoon butter

Garnishes (Optional)

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions

Instructions

  1. Prepare ingredients: Peel and dice the potatoes, chop the onion, bell pepper, and celery, and mince the garlic cloves. Gather all spices and broth required for the soup.
  2. Combine in slow cooker: Add diced potatoes, chopped onion, garlic, bell pepper, celery, smoked paprika, Cajun seasoning, dried thyme, salt, pepper, and broth into your slow cooker. Stir gently to combine.
  3. Cook soup: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are very soft and cooked through.
  4. Thicken soup: Use a potato masher or immersion blender to mash some of the potatoes directly in the slow cooker, leaving some chunks intact to add texture and thickness to the soup.
  5. Add cream and butter: Stir in the heavy cream (or half-and-half), butter, and cayenne pepper if using. Cover and cook for an additional 15-20 minutes on high until the soup is heated through and creamy.
  6. Season to taste: Taste the soup and adjust seasoning with additional salt, pepper, or Cajun seasoning if desired to suit your palate.
  7. Serve: Ladle the hot soup into bowls and garnish with shredded cheddar cheese and chopped green onions for a flavorful finish. Enjoy warm.

Notes

  • You can use either chicken or vegetable broth to keep the soup vegetarian-friendly if desired.
  • For a lighter version, substitute heavy cream with half-and-half or milk, but the soup will be less rich.
  • The cayenne pepper is optional and can be adjusted or omitted depending on your heat preference.
  • Use an immersion blender carefully to avoid over-pureeing; some texture is ideal for this soup.
  • Leftovers reheat well and tend to thicken further; add a splash of broth or cream when reheating.
