Shrimp Fajitas

  • 2 tablespoons olive oil
  • 1 1/2 cups mixed bell peppers (various colors), sliced
  • 1 cup red onion, thinly sliced
  • 1 cup mushrooms, sliced
  • 1 pound thawed shrimp, deveined and shelled
  • 3 tablespoons taco seasoning

Queso

  • 1/4 cup heavy cream, plus more for thinning if needed
  • 2 ounces cream cheese, softened
  • 1 1/2 cups shredded pepper jack cheese
  • 1/2 cup white American cheese

Instructions

  1. Heat the skillet: Heat a large skillet over medium heat and add the olive oil to warm it up.
  2. Sauté vegetables: Add the mixed bell peppers, red onion, and mushrooms to the skillet. Cook for 5-6 minutes until the vegetables are tender and slightly caramelized.
  3. Cook shrimp: Add the shrimp and taco seasoning to the skillet. Toss to coat everything evenly with the seasoning. Sear the shrimp for 2-3 minutes until they are cooked through and opaque. Remove shrimp and vegetables from the skillet and set aside.
  4. Make queso sauce: Reduce heat to low. Add softened cream cheese and heavy cream to the skillet. Stir constantly until the mixture becomes smooth and creamy with no lumps.
  5. Add cheeses: Gradually add shredded pepper jack cheese and white American cheese in increments of about half a cup, stirring continuously until fully melted and incorporated. If the queso is too thick, add more heavy cream or milk to reach your desired consistency.
  6. Combine and serve: Return the shrimp and sautéed veggies to the skillet. Stir well so everything is coated evenly in the queso sauce. Serve immediately to enjoy warm and melty.
