Shrimp Fajitas
- 2 tablespoons olive oil
- 1 1/2 cups mixed bell peppers (various colors), sliced
- 1 cup red onion, thinly sliced
- 1 cup mushrooms, sliced
- 1 pound thawed shrimp, deveined and shelled
- 3 tablespoons taco seasoning
Queso
- 1/4 cup heavy cream, plus more for thinning if needed
- 2 ounces cream cheese, softened
- 1 1/2 cups shredded pepper jack cheese
- 1/2 cup white American cheese
- Heat the skillet: Heat a large skillet over medium heat and add the olive oil to warm it up.
- Sauté vegetables: Add the mixed bell peppers, red onion, and mushrooms to the skillet. Cook for 5-6 minutes until the vegetables are tender and slightly caramelized.
- Cook shrimp: Add the shrimp and taco seasoning to the skillet. Toss to coat everything evenly with the seasoning. Sear the shrimp for 2-3 minutes until they are cooked through and opaque. Remove shrimp and vegetables from the skillet and set aside.
- Make queso sauce: Reduce heat to low. Add softened cream cheese and heavy cream to the skillet. Stir constantly until the mixture becomes smooth and creamy with no lumps.
- Add cheeses: Gradually add shredded pepper jack cheese and white American cheese in increments of about half a cup, stirring continuously until fully melted and incorporated. If the queso is too thick, add more heavy cream or milk to reach your desired consistency.
- Combine and serve: Return the shrimp and sautéed veggies to the skillet. Stir well so everything is coated evenly in the queso sauce. Serve immediately to enjoy warm and melty.
Notes
- You can adjust the thickness of the queso sauce by adding more heavy cream or milk.
- Use fresh shrimp for best texture and flavor; make sure they are properly thawed if frozen.
- Taco seasoning can be homemade or store-bought depending on your preference.
- Serve with tortilla chips, crusty bread, or over rice for a fuller meal.
- To make it spicier, add diced jalapeños or a dash of hot sauce.
