Ingredients

Scale

Sauce Ingredients

  • 1 cup beef stock
  • 1/2 cup reduced sodium soy sauce
  • 1/4 cup brown sugar
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced

Beef

  • 2 lb thinly sliced sirloin steak or boneless beef chuck roast

Thickening Mixture

  • 4 tbsp cornstarch
  • 4 tbsp water

Vegetables

  • 1 bag (12 oz) frozen broccoli florets

For Serving

  • Cooked white rice (optional)
  • Optional: sesame seeds or chopped green onions for garnish

Instructions

  1. Prepare the Sauce in the Slow Cooker: In the insert of a 6-quart crock pot, whisk together 1 cup beef stock, 1/2 cup reduced sodium soy sauce, 1/4 cup brown sugar, 1 tbsp sesame oil, and 3 cloves minced garlic until well combined to create a flavorful base for the beef.
  2. Add and Cook the Beef: Place 2 lb thinly sliced sirloin steak or boneless beef chuck roast into the sauce mixture. Toss the beef slices to coat evenly. Cover with the lid and cook on low heat for about 5 hours until the beef is tender and infused with flavors.
  3. Thicken the Sauce: Whisk 4 tbsp cornstarch with 4 tbsp water in a small bowl to make a slurry. Pour the slurry into the slow cooker and stir well to evenly distribute. This will help thicken the sauce as it continues to cook.
  4. Add Broccoli and Finish Cooking: Scatter 12 oz frozen broccoli florets evenly over the beef and thickened sauce. Gently stir to combine. Cover and cook on low for an additional 30 minutes, stirring once halfway through, until the broccoli is tender and the sauce has thickened further.
  5. Serve Over Rice: Spoon the beef and broccoli mixture over warm cooked white rice, if desired. Garnish with sesame seeds or chopped green onions for an extra special touch, then serve immediately and enjoy hot.

Notes

  • Use thinly sliced sirloin for a more tender and juicy result; chuck roast works well if sliced thinly or shredded.
  • Reduced sodium soy sauce helps control saltiness; adjust to taste if needed.
  • Do not skip the cornstarch slurry step to ensure a rich, glossy sauce.
  • Frozen broccoli cooks perfectly in the slow cooker and adds great texture without extra prep.
  • For gluten-free option, substitute soy sauce with tamari or coconut aminos.
  • Leftovers can be refrigerated for up to 3 days and reheated gently.
