Salmon:
- 4 salmon fillets (skin-on or skinless, about 6 oz each)
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
Cream Sauce:
- 3 cloves garlic, minced
- 2 cups fresh spinach (baby spinach works best)

- Sauté the Garlic and Spinach: In the same skillet, add garlic and sauté until fragrant (about 30 seconds). Add spinach and cook until wilted (about 2 minutes).
- Make the Cream Sauce: Reduce heat to low. Stir in heavy cream, Parmesan, Dijon mustard, and red pepper flakes. Simmer gently until sauce thickens (3–4 minutes). Add salt, pepper, and lemon juice to taste.
- Combine and Serve: Return salmon to the skillet and spoon the sauce over the fillets. Simmer 2–3 minutes to reheat. Serve with pasta, rice, or crusty bread.
