Cream Sauce:

  • 3 cloves garlic, minced
  • 2 cups fresh spinach (baby spinach works best)
  • 1 cup heavy cream (or half and half for a lighter version)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard (optional, for depth)
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper, to taste
  • Fresh lemon juice, to brighten (about 1 teaspoon)

Instructions

  1. Season and Sear the Salmon: Pat salmon dry and season with salt and pepper. In a large skillet over medium heat, heat olive oil and butter. Sear salmon skin-side down first, for about 4–5 minutes per side, until golden and cooked through. Remove and set aside.
  2. Sauté the Garlic and Spinach: In the same skillet, add garlic and sauté until fragrant (about 30 seconds). Add spinach and cook until wilted (about 2 minutes).
  3. Make the Cream Sauce: Reduce heat to low. Stir in heavy cream, Parmesan, Dijon mustard, and red pepper flakes. Simmer gently until sauce thickens (3–4 minutes). Add salt, pepper, and lemon juice to taste.
  4. Combine and Serve: Return salmon to the skillet and spoon the sauce over the fillets. Simmer 2–3 minutes to reheat. Serve with pasta, rice, or crusty bread.
