Served alongside a nostalgic cream soda float with vanilla ice cream and a dusting of warm spices, this recipe perfectly blends savory, sweet, and seasonal flavors for a comforting treat.

Ingredients

Scale

For the Pumpkin Spice Grilled Cheese

  • 4 slices thick-cut brioche or sourdough bread
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup canned pumpkin puree
  • 1/4 teaspoon pumpkin pie spice
  • 1/2 teaspoon maple syrup
  • Pinch of salt
  • 4 slices sharp white cheddar cheese
  • 2 slices creamy Havarti or mozzarella cheese

For the Cream Soda Float

  • 2 cups cream soda, chilled
  • 2 scoops vanilla ice cream
  • Ground cinnamon or nutmeg, for garnish (optional)

Instructions

  1. Prepare the pumpkin spice spread: In a small mixing bowl, combine the pumpkin puree, pumpkin pie spice, maple syrup, and a pinch of salt. Stir until smooth and well blended.
  2. Assemble the sandwiches: Spread the pumpkin mixture evenly onto two slices of bread. Layer each with 2 slices of sharp white cheddar and 1 slice of Havarti or mozzarella. Top with the remaining bread slices to form sandwiches.
  3. Grill the sandwiches: Spread the softened butter onto the outside surfaces of each sandwich. Heat a non-stick skillet over medium heat. Place the sandwiches in the skillet and grill for 3 to 4 minutes per side, pressing gently, until the bread is golden brown and the cheese is melted.
  4. Make the cream soda floats: Pour 1 cup of chilled cream soda into each tall glass. Add a scoop of vanilla ice cream to each glass. Garnish with a pinch of ground cinnamon or nutmeg, if desired.
  5. Serve: Serve the hot grilled cheese sandwiches alongside the cream soda floats immediately for the best taste and texture.

Notes

  • Use thick-cut bread like brioche or sourdough for optimal texture and flavor.
  • If pumpkin pie spice is unavailable, use a blend of cinnamon, nutmeg, ginger, and cloves.
  • Adjust the sweetness of the pumpkin spread by adding more or less maple syrup according to taste.
  • Serve immediately after grilling to enjoy the cheese melted and the bread crispy.
  • For a vegetarian option, confirm that cheeses used are rennet-free.
  • The cream soda float is optional but adds a fun, nostalgic pairing to the grilled cheese.
