Dry Ingredients

  • 1 cup (258 g) creamy peanut butter
  • ¼ cup (57 g / ½ stick) unsalted butter (can use salted butter)

Instructions

  1. Add Chex to bowl: Begin by placing the Rice Chex cereal in a large mixing bowl and set it aside to prepare the coating mixture.
  2. Microwave chocolate, peanut butter, and butter: In a separate medium microwave-safe bowl, combine the semi-sweet chocolate chips, creamy peanut butter, and unsalted butter. Microwave the mixture in 30-second increments, stirring well between each interval until the mixture is completely melted and smooth.
  3. Add mini marshmallows and melt: Stir the mini marshmallows into the chocolate-peanut butter mixture, then return the bowl to the microwave. Heat again in 30-second intervals, stirring each time, until the marshmallows puff up and melt, creating a thick and creamy coating mixture.
  4. Pour marshmallow mixture over cereal: Pour the melted marshmallow mixture over the Chex cereal in the large bowl. Stir thoroughly to make sure every piece of cereal is generously coated with the mixture.
  5. Press mixture into baking dish and refrigerate: Transfer the coated cereal mixture into a greased 9×13 inch baking pan. Use a spatula or your hands to press the mixture firmly and evenly into the pan. Place the pan in the refrigerator to chill and set for 10-15 minutes.
