Wet Ingredients:

  • 1 cup plain Greek yogurt (full-fat for richer taste)
  • 1/2 cup natural sweetener (honey, maple syrup, or coconut sugar)
  • 1 large egg (room temp)
  • 1 tsp pure vanilla extract

Dry Ingredients:

  • 1 cup oat flour
  • 1/2 cup protein powder (vanilla or neutral whey works best)
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Mix-Ins:

  • 1/2 cup mix-ins (chocolate chips, nuts, or dried fruit)

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare wet ingredients: Whisk Greek yogurt, sweetener, egg, and vanilla until smooth.
  3. Mix dry ingredients: In another bowl, mix oat flour, protein powder, baking soda, and salt.
  4. Combine wet and dry ingredients: Fold dry ingredients into wet mixture until just combined—don’t overmix.
  5. Add mix-ins: Stir in mix-ins of your choice.
  6. Bake: Scoop tablespoon-sized portions onto baking sheet, flatten slightly. Bake 10–12 minutes until edges are golden.
  7. Cool and serve: Cool on sheet for 5 minutes, then transfer to a wire rack.

Notes

  • Chill dough 15 min for thicker cookies.
  • Swap oat flour with almond flour for a different texture.
