Instructions

  1. Prepare Greek Yogurt: Place the 2 cups of plain Greek yogurt into a large 4-cup measuring cup or mixing bowl to make pouring easier later.
  2. Heat Coffee Mixture: In a saucepan, combine 1 cup milk, 1/3 cup raw cane sugar, 7g gelatin powder, 1 tbsp espresso powder, 1 tsp vanilla extract, and a pinch of salt. Heat gently and stir regularly to dissolve the sugar, espresso powder, and gelatin. Bring the mixture to a simmer but do not boil.
  3. Cool Mixture: Remove the saucepan from heat and let the mixture cool for 2 to 3 minutes to avoid curdling the yogurt when mixed.
  4. Combine with Yogurt: Pour the slightly cooled coffee and gelatin mixture into the Greek yogurt. Stir thoroughly until the two are fully incorporated and smooth. If using, add in 1 scoop of vanilla protein powder and mix well.
  5. Portion into Glasses: Divide the combined mixture evenly into four serving glasses or containers.
