  • 4 oz mozzarella cheese (grated)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Brown the Sausage: Heat the olive oil in a large pot over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through.
  2. Sauté Vegetables: Add the diced onion and green bell pepper to the pot with the sausage. Sauté for a few minutes until the vegetables soften and become translucent.
  3. Add Aromatics and Herbs: Stir in the finely diced garlic, dried oregano, dried basil, and dried marjoram. Cook for another minute, stirring frequently, until the mixture becomes fragrant.
  4. Combine Tomatoes and Stock: Pour in the crushed tomatoes, tomato sauce, and chicken stock. Add the sugar and quartered pepperoni. Stir well to combine all ingredients.
  5. Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 10 minutes to allow the flavors to meld together.
  6. Add Fresh Basil and Season: Stir in the shredded fresh basil leaves. Taste the soup and season with salt and freshly ground black pepper according to your preference.
