Truffle Base
- 150g golden Oreo cookies (or plain / gluten-free biscuits)
- 60g vegan or dairy-free cream cheese
- 200g dairy-free white chocolate
Decorations
- Black food gel
- Orange food gel
- Strawberry laces or candy pencils (for the scarf)
- Prepare the Tray: Line a baking tray with greaseproof paper and set aside to catch the truffles after coating.
- Crush Cookies: Place the cookies in a food processor or blender and pulse until they become fine crumbs. Alternatively, crush with a rolling pin if no electric appliance is available.
- Make Truffle Mixture: Transfer the cookie crumbs to a large mixing bowl. Add the dairy-free cream cheese and mix thoroughly until the mixture is sticky and holds its shape when squeezed into balls.
- Form Snowman Shapes: Using clean hands, weigh 20g of the mixture and roll into a larger ball. Roll a smaller 7g ball and place it on top of the larger one to form the snowman shape. Place each snowman on the lined tray and repeat for the remaining mixture.
- Freeze to Set: Place the tray in the freezer for about 20 minutes or until the truffles are firm to the touch.
- Melt White Chocolate: Approximately 5 minutes before the truffles are ready, melt the white chocolate using a bain-marie (a bowl over a pan of boiling water) or microwave in short bursts until smooth.
- Coat Truffles: Remove the truffles from the freezer. Using a toothpick or a fork, dip each snowman into the melted white chocolate, coating thoroughly. Let excess drip off and, if desired, repeat for a thicker coating. Place back on the lined tray.
- Set Coating: Return the coated truffles to the freezer for 5-10 minutes until the chocolate hardens quickly due to the cold truffles.
- Prepare Decorations: Color small amounts of leftover white chocolate with black and orange food gels separately. Transfer each into piping bags and snip the tips.
- Decorate Snowmen: Pipe orange carrot noses onto the snowmen, then add black eyes, mouths, and buttons to bring them to life.
- Add Scarves: Cut strawberry lace sweets or candy pencils to size and wrap them around the snowmen’s necks. Use a dab of melted white chocolate if needed to secure the scarves in place.
- Final Set: Place decorated truffles back into the freezer for another 5 minutes to allow decorations to set firmly.
- Serve and Enjoy: Once set, remove from freezer and enjoy these charming festive treats!
Notes
- You can substitute gluten-free biscuits for a gluten-free version.
- If you do not have a food processor, robustly crushing the cookies with a rolling pin works well.
- Make sure the truffle mixture is sticky enough to hold shape; if too dry, add a tiny bit more cream cheese.
- Be gentle when coating the truffles in chocolate to preserve the snowman shape.
- Use a toothpick or fork carefully for dipping to reduce mess and ensure even coating.
- The truffles freeze well and can be stored chilled until serving.
- This recipe is naturally vegan and dairy-free, suitable for those with lactose intolerance.
