  • 60g vegan or dairy-free cream cheese
  • 200g dairy-free white chocolate

Instructions

  1. Prepare the Tray: Line a baking tray with greaseproof paper and set aside to catch the truffles after coating.
  2. Crush Cookies: Place the cookies in a food processor or blender and pulse until they become fine crumbs. Alternatively, crush with a rolling pin if no electric appliance is available.
  3. Make Truffle Mixture: Transfer the cookie crumbs to a large mixing bowl. Add the dairy-free cream cheese and mix thoroughly until the mixture is sticky and holds its shape when squeezed into balls.
  4. Form Snowman Shapes: Using clean hands, weigh 20g of the mixture and roll into a larger ball. Roll a smaller 7g ball and place it on top of the larger one to form the snowman shape. Place each snowman on the lined tray and repeat for the remaining mixture.
  5. Freeze to Set: Place the tray in the freezer for about 20 minutes or until the truffles are firm to the touch.
  6. Melt White Chocolate: Approximately 5 minutes before the truffles are ready, melt the white chocolate using a bain-marie (a bowl over a pan of boiling water) or microwave in short bursts until smooth.
  7. Coat Truffles: Remove the truffles from the freezer. Using a toothpick or a fork, dip each snowman into the melted white chocolate, coating thoroughly. Let excess drip off and, if desired, repeat for a thicker coating. Place back on the lined tray.
