Instructions

  1. Blend Ingredients: In a blender, combine the oats, maple syrup, cottage cheese, vanilla extract, and softened peanut butter. Blend until the mixture is smooth and well incorporated. Warming the peanut butter slightly helps it blend more easily.
  2. Mix Dry Ingredients: Transfer the blended cottage cheese mixture to a large bowl. Add the protein powder and unsweetened cocoa powder, mixing thoroughly to combine. Fold in 1/4 cup of the chocolate chips gently.
  3. Scoop and Freeze: Use a portion scoop or tablespoon to scoop even-sized bites, shaping each into a ball. Place the protein bites onto a sheet pan, then freeze for 5-10 minutes until they set firmly.
  4. Melt Chocolate Coating: In a small bowl, combine the remaining 3/4 cup of chocolate chips with the melted coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
