Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the tarts.
  2. Prepare Puff Pastry: On a lightly floured surface, roll out the puff pastry to about 1/4 inch thickness. Cut the pastry into squares or circles, depending on your tartlet molds.
  3. Fit Pastry into Molds: Place the pastry pieces into tartlet molds, ensuring they fit well. Prick the bottom with a fork to prevent puffing during baking.

  5. Prepare Cheese Mixture: In a bowl, mix the softened herbed goat cheese with heavy cream until creamy. Beat in the egg until fully incorporated. This mixture will be the filling for the tarts.
  6. Combine Ingredients: Add the sautéed mushrooms and shallots to the cheese mixture. Stir until well combined.
  7. Fill Tart Shells: Spoon the mushroom and cheese mixture into the prepared pastry shells, filling each one to the brim.
