For the Chicken Stuffing

  • 2 medium apples, thinly sliced
  • 4 boneless, skinless chicken breasts
  • 8 oz brie cheese, sliced

For the Maple Thyme Glaze

  • 1/2 cup apple cider
  • 2 tbsp maple syrup
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • 1 tsp fresh thyme leaves
  • Salt and black pepper, to taste

Instructions

  1. Preheat and prepare chicken: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly spray a broil-safe skillet with nonstick spray. Butterfly each chicken breast by cutting horizontally but not all the way through, then season generously with salt and pepper both inside and out.
  2. Stuff the chicken: Lay thin slices of apple inside each butterflied chicken breast, then layer with slices of brie cheese. Carefully fold the chicken back together to encase the filling.
  3. Bake the chicken: Place the stuffed chicken breasts on the prepared baking sheet or skillet and bake for 25 to 30 minutes until the chicken is almost cooked through.
  4. Make the glaze: While the chicken bakes, combine apple cider, maple syrup, Dijon mustard, minced garlic, thyme leaves, salt, and pepper in a small skillet over medium heat. Simmer the mixture until thickened and reduced by about half, approximately 12 to 15 minutes.
  5. Broil with glaze: Increase the oven setting to broil. Brush the maple-thyme glaze generously over the chicken breasts and broil for 10 to 12 minutes, or until the chicken registers 165°F (74°C) internally and has a golden brown finish.
  6. Serve: Remove the chicken from the oven and let rest a few minutes. Serve warm with extra glaze drizzled on top for a flavorful, juicy finish.
