Chicken and Stuffing

Maple Glaze

  • 1 cup apple cider or apple juice
  • 2 tablespoons pure maple syrup
  • ½ tablespoon minced garlic (about 2 garlic cloves)
  • 1 teaspoon Dijon mustard
  • 2 teaspoons fresh thyme leaves, removed from stems
  • ½ teaspoon kosher salt

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly spray a broil-safe skillet with nonstick spray to prevent sticking.
  2. Butterfly the Chicken: Carefully cut each chicken breast horizontally so it opens like a book, making sure not to cut all the way through. Season the inside with 1 teaspoon kosher salt and ½ teaspoon black pepper for flavor.
  3. Stuff the Chicken: Layer 7 to 9 thin half-moon apple slices inside each butterflied chicken breast, then add 3 to 4 thin slices of brie cheese on top. Fold the chicken back together to enclose the apple and brie layers.
  4. Bake the Chicken: Transfer the stuffed chicken breasts onto your prepared baking sheet or skillet. Bake in the oven for 25 to 30 minutes, until the chicken is almost cooked through.
  5. Prepare the Maple Glaze: While the chicken bakes, combine apple cider or juice, maple syrup, minced garlic, Dijon mustard, fresh thyme, and salt in a small skillet over medium heat. Simmer until the glaze thickens and reduces to about half its volume, roughly 12 to 15 minutes.
  6. Broil with Glaze: Switch your oven to broil. Brush the thickened glaze generously over the chicken breasts and broil for 10 to 12 minutes, or until the internal temperature reaches 165°F (74°C). Keep a close eye to prevent the glaze from burning.
