Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Sauté Garlic: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic cloves and sauté for about 1 minute until fragrant but not browned.
  3. Combine Chicken Mixture: Add 1 tablespoon of Italian seasoning, 3/4 cup of marinara sauce, and 2 tablespoons of almond flour to the skillet. Stir to combine, then add the cubed chicken. Cook the mixture for 5 minutes, allowing flavors to meld and almond flour to slightly thicken the sauce.
  4. Prepare Casserole Dish: Spray a 9” x 13” casserole dish with non-stick cooking spray to prevent sticking and for easy cleanup.
  5. Assemble Casserole: Pour the chicken and marinara mixture evenly into the prepared casserole dish. Then layer the grated parmesan cheese evenly on top, followed by the shredded mozzarella cheese. Finally, sprinkle the finely crushed parmesan crisps or pork rinds evenly over the cheese layers for a crispy topping.
  6. Bake: Place the casserole in the preheated oven and bake for 25-30 minutes. The casserole should be heated through, and the cheese melted and bubbly.
  7. Cool and Serve: Remove the casserole from the oven and let it rest for a few minutes before serving. This allows the flavors to settle and makes serving easier.
