Jalapeno Popper Mushrooms are a delicious and spicy appetizer featuring large mushrooms stuffed with a creamy mixture of cream cheese, cheddar, jalapeños, and bacon. Baked until golden and tender, these cheesy, flavorful bites are perfect for game day, parties, or any casual gathering.

Ingredients

Scale

Mushrooms

  • 12 large white mushrooms or baby portobello mushrooms

Filling

  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 23 jalapeños, finely chopped (adjust for heat preference)
  • 2 slices cooked bacon, crumbled (optional)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • Chopped mushroom stems from the 12 mushrooms

Topping

  • 2 tbsp grated Parmesan cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare Mushrooms: Clean the mushrooms gently with a damp paper towel to remove any dirt. Carefully remove the stems and set the caps aside. Finely chop the stems for the filling mixture.
  3. Make the Filling: In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, finely chopped jalapeños, crumbled bacon (if using), garlic powder, onion powder, salt, pepper, and the chopped mushroom stems. Mix thoroughly until well combined.
  4. Stuff the Mushrooms: Using a spoon, stuff each mushroom cap generously with the jalapeño and cheese mixture. Place the stuffed caps on the prepared baking sheet and sprinkle each with a little grated Parmesan cheese.
  5. Bake: Bake the stuffed mushrooms in the preheated oven for 15 to 20 minutes, or until the mushrooms are tender and the tops are golden brown and bubbly.
  6. Serve: Allow the mushrooms to cool for a few minutes after baking, then serve warm as a spicy, cheesy appetizer or snack perfect for sharing.

Notes

  • Adjust the amount of jalapeños to control the spice level based on your preference.
  • For a vegetarian version, omit the bacon and consider adding smoked paprika for extra flavor.
  • Make sure to use fresh mushrooms for the best texture and flavor.
  • Can be prepared ahead and refrigerated before baking; just add baking time if coming from cold.
  • Serve with ranch or sour cream dip for an extra creamy complement.
