  • 1 tsp Cumin
  • 68 Chipotle Peppers in Adobo, roughly chopped

Liquids and Oils

  • 1 Tbsp (16g) Olive Oil
  • 1/4 cup (60g) Lime Juice
  • 1 Tbsp (21g) Honey
  • 4 oz Broth or Water

Instructions

  1. Sauté Onion and Garlic: Using the Instant Pot’s sauté function, heat the olive oil and cook the diced onion until soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional 30 to 60 seconds until fragrant.
  2. Brown the Ground Turkey: Push the cooked onion and garlic to the sides of the pot, creating a well in the center. Add the ground turkey into the center and let it sear undisturbed for 3-4 minutes until the bottom browns. Flip and brown the other side similarly, then crumble and continue cooking until fully browned.
  3. Add Remaining Ingredients: Add chopped chipotle peppers, lime juice, honey, broth or water, salt, ground coriander, and cumin to the cooked turkey mixture. If preferred, blend the chipotle peppers with the liquids before adding to control the heat and texture.
  4. Pressure Cook: Seal the Instant Pot lid and set it to pressure cook for 6 minutes. Once cooking is complete, perform a quick release of the pressure.
  5. Season and Serve: Open the lid, stir the taco meat, and adjust salt and pepper to taste. Serve immediately on tortillas with optional toppings like fresh white onion, cilantro, and fat-free Greek yogurt. For a cheesy variation, grill the tacos with shredded cheese as described in the notes.

  • To reduce the heat from chipotle peppers, remove seeds or blend them into a smooth sauce before adding.
