  • 3 cups thinly sliced Yukon gold potatoes
  • 2 cups thinly sliced carrots (34 large)
  • 1 large thinly sliced yellow onion

Seasonings & Oils

  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • 1 teaspoon paprika
  • ¼ teaspoon dried thyme
  • Salt and pepper to taste

  • 4 tablespoons unsalted butter (cut into tablespoons)
  • Cooking spray (for foil coating)

Instructions

  1. Preheat Oven or Grill: Set your oven to 400°F (205°C) or preheat your grill to medium-high heat, approximately 425–450°F.
  2. Prepare Foil Sheets: Tear off four sheets of heavy-duty aluminum foil. Lightly coat each sheet with cooking spray to prevent sticking.
  3. Slice Ingredients: Cut the smoked sausage into coins. For larger carrots and onion, cut them in half before thinly slicing all vegetables – potatoes, carrots, and onion.
  4. Mix Ingredients: In a large bowl, combine sausage, sliced potatoes, carrots, onion, olive oil, Italian seasoning, dried basil, dried parsley, garlic powder, paprika, dried thyme, salt, and pepper. Toss everything until evenly coated.
  5. Assemble Packets: Divide the mixture evenly onto the prepared foil sheets. Place a tablespoon of unsalted butter on top of each mound of ingredients.
  6. Seal Foil Packets: Fold the foil over the ingredients and seal tightly to create secure packets.
  7. Cook: Place the foil packets on a baking sheet if using an oven or directly on the grill. Bake in the oven for 30–35 minutes or grill for 20–30 minutes until the vegetables are tender.
