Ingredients

Scale

Main Ingredients

  • 1 lb ground turkey
  • 2 large sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced

Spices & Seasonings

  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Toppings

  • 1 cup shredded mozzarella or cheddar cheese
  • Fresh parsley or cilantro, chopped, for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish to prepare it for the casserole.
  2. Cook the Ground Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes. Add the ground turkey, breaking it up with a spoon, and cook until browned, approximately 5-6 minutes. Drain excess fat if needed.
  3. Add the Vegetables and Seasonings: Stir in the minced garlic, diced red bell pepper, sweet potatoes, smoked paprika, ground cumin, thyme, salt, and pepper. Cook for an additional 3-5 minutes until the spices become fragrant and the vegetables start to soften.
  4. Assemble and Bake: Transfer the turkey and vegetable mixture into the prepared baking dish. Cover with foil and bake for 25 minutes, or until the sweet potatoes are tender when pierced with a fork.
  5. Add Cheese and Finish Baking: Remove the foil, sprinkle shredded mozzarella or cheddar cheese evenly over the top, and bake uncovered for another 10-15 minutes until the cheese is melted, bubbly, and slightly golden.
  6. Serve: Garnish with freshly chopped parsley or cilantro if desired. Serve the dish hot for a deliciously comforting meal.

Notes

  • Use either mozzarella or cheddar cheese depending on your preference for a milder or sharper flavor.
  • Ensure the sweet potatoes are diced evenly for uniform cooking.
  • You can substitute ground turkey with ground chicken or lean beef if preferred.
  • This dish can be prepared ahead and refrigerated before baking.
  • Leftovers store well in the fridge for up to 3 days and reheat nicely.
