  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare Sweet Potatoes: Add diced sweet potatoes to a microwave-safe plate and cover with a damp paper towel. Microwave on high for 5 minutes until tender. Carefully remove and set aside.
  2. Make Sauce: In a small bowl, combine the sour cream and salsa. Stir until combined and set aside to serve later.
  3. Cook Turkey: Heat a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, for about 5 minutes until it’s mostly cooked with just a tiny bit of pink remaining. Drain any excess liquid from the skillet if necessary.
  4. Combine Ingredients: To the skillet, add the warm sweet potatoes, black beans, kosher salt, chipotle chili powder, and cumin. Stir well and cook for an additional 5 minutes, stirring occasionally, until the sweet potatoes are soft and the turkey is fully cooked.
  5. Add Cheese and Toppings: Remove the skillet from heat and sprinkle shredded cheddar cheese over the top. Allow the cheese to melt. Then, top with sliced green onions and diced tomatoes.
