Crust
- 1 cup Oreo Crumbs (about 10–11 Oreos pulsed)
- 2 1/2 tbsp Butter, melted
Cheesecake Filling
- 2 (8 oz) packages Cream Cheese, softened
- 1/2 cup Sugar
- 2 Eggs
- 1 tsp Vanilla Extract
- Neon Green Food Coloring (enough to achieve desired Grinchy color)
Optional Toppings
- Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Line a cupcake pan with cupcake liners for easy removal and cleanup.
- Make the Crust: Using a food processor, pulse about 10-11 Oreo cookies until they form fine crumbs. Add the melted butter to the crumbs and pulse again until the mixture is well combined and resembles wet sand.
- Form the Crust Base: Evenly divide the Oreo crumb mixture among the cupcake liners, pressing firmly down into the bottom of each liner to create a solid crust layer.
- Prepare the Cheesecake Filling: In a medium mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Then add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Add Color: Mix in neon green food coloring a few drops at a time until you reach your desired vibrant Grinch green color.
- Fill the Cups: Spoon about 1/4 cup of the green cheesecake batter into each cupcake liner, ensuring the batter is evenly distributed.
- Bake: Bake the mini cheesecakes at 350°F for 15-17 minutes. The centers should still be slightly jiggly but mostly set.
- Cool and Chill: Remove the pan from the oven and let the cheesecakes cool completely in the pan at room temperature. Once cooled, refrigerate the cheesecakes until firm, at least 2-3 hours.
- Serve: Before serving, top with whipped cream and sprinkles if desired for a festive touch.
Notes
- Make sure the cream cheese is softened to room temperature for a smooth filling without lumps.
- Do not overbake; the centers should remain slightly jiggly to avoid cracking and drying out the cheesecake.
- Use neon green gel food coloring for the most vibrant color without thinning the batter.
- These mini cheesecakes can be stored in the refrigerator for up to 3 days.
- Feel free to customize toppings with crushed candy canes or red sprinkles for extra holiday flair.
