Instructions

  1. Mix the pastry: Combine the gluten-free flour blend, sea salt, and cold cubed butter. Rub or mix together until the mixture resembles coarse crumbs.
  2. Form the dough: Add the egg yolk and 2 tablespoons of cold water to the crumbly mixture. Mix gently to bring the dough together. Be careful not to overwork.
  3. Chill the dough: Wrap the dough in plastic wrap and chill it in the refrigerator for 30 minutes to firm up and relax.
  4. Prepare the filling: In a bowl, combine the mincemeat filling, maple syrup (if using), mixed spice, cinnamon, and orange zest. Mix well until evenly combined.
  5. Roll out the dough: On a lightly floured surface, roll the chilled dough to about 3mm thickness.
  6. Cut and fill: Cut out circles from the dough to fit your mince pie tins or a muffin tray. Place a spoonful of the spiced mincemeat filling in the center of each pastry circle.
  7. Seal the pies: Place another dough circle on top or create traditional tops and seal edges firmly with a fork to prevent leaking. Brush the tops with beaten egg wash for a golden finish.
