Ingredients

Scale

Meatloaf

  • 1 lb ground chicken (90-93% lean)
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs
  • 1 egg
  • 1/4 cup grated or finely chopped onion
  • 1 tablespoon fresh parsley (or 1 tsp dried)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Parmesan Sauce

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon flour
  • 3/4 cup milk
  • 1/3 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper, or lightly grease a muffin tin for shaping the meatloaves.
  2. Mix the meatloaf ingredients: In a large bowl, combine ground chicken, minced garlic, grated onion, Parmesan cheese, breadcrumbs, egg, parsley, salt, pepper, and Italian seasoning. Mix gently to incorporate all ingredients evenly without overworking the meat.
  3. Shape the meatloaves: Form the mixture into small individual meatloaves by hand or spoon the mixture into muffin tin cups for uniform portions.
  4. Bake until cooked through: Place the shaped meatloaves on the prepared baking sheet or muffin tin and bake for 22-25 minutes, or until the internal temperature reaches 165°F (74°C), ensuring they are fully cooked and juicy.
  5. Prepare the Parmesan sauce: While the meatloaves bake, melt butter in a medium saucepan over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  6. Make a roux and finish the sauce: Stir in the flour and whisk constantly for 30 seconds to cook out the raw flavor. Gradually pour in the milk, whisking continuously to avoid lumps, and cook until the sauce thickens slightly. Then stir in the Parmesan cheese until melted and smooth; season with salt and pepper to taste.
  7. Serve: Spoon the creamy Parmesan sauce over the cooked meatloaves and garnish with fresh parsley. Serve immediately for best flavor and texture.

Notes

  • Use fresh garlic for the best flavor; avoid pre-minced garlic for a more vibrant taste.
  • Breadcrumbs help keep the meatloaf moist; you can substitute with gluten-free breadcrumbs if desired.
  • Do not overmix the meat to keep the meatloaves tender.
  • Check the internal temperature with a meat thermometer to ensure safe cooking.
  • The Parmesan sauce can be made ahead and reheated gently before serving.
  • Fresh parsley garnish adds a pop of color and fresh flavor.
