Dream Cookies, or Drömmar, are delicate Swedish butter cookies known for their light, airy texture and subtle vanilla flavor. Made with simple ingredients including butter, sugar, vanilla, and baker’s ammonia, these cookies are gently baked at a low temperature to achieve a crisp exterior with a melt-in-your-mouth center, perfect with a cup of tea or coffee.

  • 1/2 tsp Baker’s Ammonia
  • 2 tsp Vanilla sugar (or vanilla extract)

Wet Ingredients

  • 50 g Butter (1.75 oz) (room temperature)
  • 90 g Sugar (2/3 cup) (1½ dl)
  • 3 tbsp Vegetable oil

Instructions

  1. Preheat Oven: Preheat your oven to 150°C (300°F) to ensure it’s properly heated before baking the cookies.
  2. Mix Butter and Sugars: In a mixing bowl, cream together the room temperature butter, sugar, and vanilla sugar (or vanilla extract) until the mixture is smooth and well combined.
  3. Add Vegetable Oil: Gradually add the vegetable oil to the mixture while continuing to mix, ensuring it is fully incorporated and the dough is smooth.
  4. Prepare Baker’s Ammonia: Combine the baker’s ammonia with a small portion of the flour to disperse it evenly, then add this mixture to the dough and mix thoroughly.
  5. Add Remaining Flour: Incorporate the rest of the flour into the dough, mixing until a consistent, pliable cookie dough forms.
  6. Form Dough Balls: Roll small portions of the dough into balls roughly the size of a walnut and place them evenly spaced on a lined baking sheet.
  7. Bake Cookies: Bake the dough balls in the middle rack of the oven for 15 to 17 minutes until the cookies are lightly golden and dry on the surface.
  8. Cool Cookies: Allow the cookies to cool on the baking sheet fully before transferring them, to help them firm up and develop the perfect delicate texture.

  • Baker’s ammonia (ammonium bicarbonate) is a traditional leavening agent that helps create the cookies’ characteristic crispiness and light texture.
