Spice Blend:

  • 5 grammes fresh ginger
  • 250 grammes onions (2 large)
  • 3 cloves of garlic
  • 1 small red chili (optional)

Butter Chicken:

  • 80 grammes salted butter
  • 10 grammes ground coriander (2 teaspoons)
  • 10 grammes smoked paprika (2 teaspoons)
  • 1/2 teaspoon cinnamon powder
  • 10 grammes turmeric (2 teaspoons)
  • 5 grammes salt (1 teaspoon)
  • 10 grammes Tandoori curry (or 2 teaspoons of Garam masala)
  • 5 grammes brown sugar (1 teaspoon)
  • 600 grammes chicken fillets
  • 15 milliliters lime juice (1 tablespoon)
  • 100 grammes tomato paste
  • 1 chicken bouillon cube
  • 400 grammes diced tomatoes (1 can)
  • 200 milliliters heavy cream
  • Fresh coriander leaves for garnish

Instructions

  1. Prepare the Spice Blend: In a food processor, combine ginger, chili, onions, and garlic. Process until finely chopped.
  2. Cook the Aromatics: In a skillet, melt butter and add the spice blend. Cook for a few minutes.
  3. Add Spices: Stir in coriander, paprika, cinnamon, turmeric, salt, curry powder, and sugar.
  4. Cook the Chicken: Add chicken, lime juice, tomato paste, bouillon cube, and diced tomatoes. Simmer until chicken is cooked.
  5. Finish with Cream: Stir in the cream and simmer briefly.
  6. Thicken and Serve: Cook until desired consistency. Garnish with fresh coriander and serve hot.

Notes

  • This dish can be reheated gently for 40 minutes in a slow cooker for enhanced flavors.
