  • 2 large chicken breasts
  • 1 can black beans (drained and rinsed)
  • 1 can corn (undrained)
  • 10 ounces can Rotel tomatoes with green chilis (undrained)
  • 1 packet ranch seasoning
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • ½ cup water
  • 8 ounces cream cheese

Instructions

  1. Prepare Crockpot: Spray the bottom of the crockpot with nonstick cooking spray to prevent sticking.
  2. Add Chicken: Place the two large chicken breasts evenly on the bottom of the crockpot.
  3. Add Remaining Ingredients: On top of the chicken, add the drained and rinsed black beans, undrained corn, undrained Rotel tomatoes with green chilies, ranch seasoning packet, ground cumin, chili powder, onion powder, and half a cup of water. Mix gently to combine ingredients evenly around the chicken.
  4. Add Cream Cheese: Place the entire block of cream cheese on top of the mixture without stirring it in. This allows it to melt slowly during cooking.
  5. Cook: Cover and cook on low heat for 6-8 hours or on high heat for 4 hours. The chicken will become tender and the cream cheese will melt into the chili.
  6. Finish and Serve: Once cooking is complete, stir the chili to blend the cream cheese fully and shred the chicken with two forks. Serve hot, topped with your choice of shredded cheese, sour cream, diced avocado, fresh tomatoes, and Fritos or tortilla chips for added texture and flavor.

  • If you prefer a spicier chili, add a diced jalapeño or extra chili powder.
