For Chicken:

  • 300 grams Chicken, cut into small cubes (2 1/23 cm)
  • 1 Egg White
  • 1 tbsp Rice Vinegar
  • 1 tsp Soy Sauce
  • Salt, to taste
  • Pepper, to taste
  • 1/4 cup + 2 tbsp Flour
  • Oil, for deep frying

For Sticky Sauce:

  • 1/2 tbsp Oil
  • 1 tbsp Garlic, finely chopped
  • 1/2 cup Vegetable Stock
  • 1 tbsp Honey
  • 1 tsp Soy Sauce
  • 1 tsp Rice Vinegar
  • 2 tbsp Orange Marmalade
  • 2 tsp Sugar
  • 1/2 tbsp Cornflour/Cornstarch
  • 1 tbsp Water

Instructions

  1. Heat oil in a heavy-bottomed pan.
  2. Mix chicken with egg white, soy sauce, vinegar, salt, and pepper. Add flour and coat the chicken.

  3. Fry the chicken pieces until crisp; set aside.
  4. Prepare the sticky sauce by combining soy sauce, vinegar, stock, honey, sugar, and orange marmalade; set aside.
  5. In a pan, sauté garlic in oil, then add the sauce and simmer.
  6. Make a cornflour slurry, add to the sauce, and cook until thickened.
  7. Add fried chicken, coat well, and simmer.
  8. Let cook briefly, then garnish with spring onions and serve.

Notes

  • Note 1: Use store-bought or homemade orange marmalade for best results.
