Ingredients

Scale

Brown Sugar Cinnamon Mixture

  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon

Apple Bread Batter

  • 1/2 cup butter, softened
  • 2/3 cup granulated sugar
  • 2 eggs, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk or almond milk, room temperature

Apple Mixture

  • 2 large apples (like Granny Smith), peeled and chopped small but not finely
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Glaze

  • 1/2 cup powdered sugar
  • 1 to 3 tablespoons milk or cream

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with non-stick cooking spray or line it with foil or parchment paper and spray for easy removal of the bread.
  2. Make cinnamon brown sugar mixture: In a small bowl, combine 1/3 cup light brown sugar and 1 teaspoon ground cinnamon. Set aside for layering.
  3. Combine dry flour mixture: Whisk together 1 1/2 cups all-purpose flour and 1 3/4 teaspoons baking powder in a bowl. Set aside.
  4. Cream butter and sugar: In a large bowl, beat 1/2 cup softened butter and 2/3 cup granulated sugar together until creamy and well blended.
  5. Add eggs and vanilla: Add 2 room-temperature eggs one at a time to the butter mixture, mixing well after each. Stir in 1 1/2 teaspoons vanilla extract.
  6. Combine batter: Gradually add the flour mixture alternately with 1/2 cup milk (or almond milk), blending until just smooth and combined.
  7. Prepare apples: In a separate bowl, toss the chopped apples with 2 tablespoons granulated sugar and 1 teaspoon cinnamon.
  8. Assemble first layer: Pour half of the batter into the prepared loaf pan and spread evenly. Layer half of the apple mixture evenly over the batter, then sprinkle half of the brown sugar cinnamon mixture on top.
  9. Assemble second layer: Pour in the remaining batter on top and spread out smoothly. Add the remaining apple mixture and sprinkle the remaining brown sugar cinnamon mixture evenly.
  10. Swirl mixture: Use a knife to gently swirl through the layers a few times to create a marbled effect with the sugar mixture.
  11. Bake: Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  12. Prepare glaze: While the bread bakes, mix 1/2 cup powdered sugar with 1 to 3 tablespoons milk or cream until smooth. If needed, microwave for 10 seconds to make it pourable.
  13. Cool and glaze: Let the baked loaf rest in the pan for about 15 minutes, then remove and cool completely on a wire rack. Drizzle the glaze over the cooled bread.
  14. Serve: Slice and enjoy your delicious country apple fritter bread with extra glaze if desired.

Notes

  • Use Granny Smith or any tart apple to balance the sweetness in the bread.
  • To make the bread dairy-free, substitute butter with a plant-based alternative and use almond milk as suggested.
  • For easier slicing, allow the bread to cool completely before cutting.
  • You can double the glaze ingredients for more generous topping.
  • Store leftovers wrapped tightly at room temperature for up to 3 days or refrigerate for up to a week.
