Ingredients

Scale

Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar

Cream Cheese Filling

  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract

Topping

  • 1/4 cup melted butter
  • 1/4 cup brown sugar
  • 1 tbsp cinnamon

Glaze

  • 1 cup powdered sugar
  • 23 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix thoroughly until the crumbs are well-coated with butter. Press the mixture firmly into the bottom of a greased 9×13 inch baking pan to form an even crust.
  2. Make the cream cheese filling: In a large bowl, beat the softened cream cheese with the sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully incorporated. Pour the cream cheese mixture evenly over the prepared crust.
  3. Create the cinnamon topping: In a small bowl, mix together the melted butter, brown sugar, and cinnamon until combined. Drizzle or spoon this mixture evenly over the cream cheese layer.
  4. Bake the bars: Place the baking pan in the preheated oven and bake for 35-40 minutes, or until the filling is set and the topping is bubbly and lightly caramelized. Remove from oven and allow to cool completely in the pan on a wire rack.
  5. Prepare the glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk or powdered sugar as needed to achieve a drizzle-able glaze.
  6. Glaze and serve: Once the bars have cooled, drizzle the vanilla glaze evenly over the top. Cut into squares and serve. Store leftovers in an airtight container in the refrigerator for up to 4 days.

Notes

  • Ensure cream cheese is softened to room temperature for smooth mixing.
  • You can substitute regular sugar with coconut sugar for a different flavor profile.
  • Adjust cinnamon amount in topping according to taste preference.
  • Bars can be stored at room temperature for a day but refrigerate for longer freshness.
  • Use full-fat cream cheese for best texture and flavor.
