Ingredients

Scale

Chicken

  • 6 thin-sliced chicken breasts
  • Salt and pepper to taste
  • 1 dash Weber Herb and Garlic Seasoning

Sauce and Vegetables

  • 1 container (8 oz) green onion cream cheese
  • ¼ cup olive oil
  • ½ cup chicken broth
  • 1 large package of sliced mushrooms (about 8 oz)
  • 1 small bag of fresh baby spinach (about 5 oz)

Topping

  • 8 oz shredded mozzarella cheese

Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C). Lightly grease a 13×9-inch baking dish to prevent sticking.
  2. Arrange and season chicken: Place the thin-sliced chicken breasts in a single layer in the prepared baking dish. Season each breast evenly with salt, pepper, and a dash of Weber Herb and Garlic Seasoning for added flavor.
  3. Sauté mushrooms: In a skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté until they soften and release their juices, about 5-7 minutes.
  4. Layer vegetables: Evenly spread the sautéed mushrooms over the chicken breasts, then top with fresh baby spinach, allowing the heat from the dish to slightly wilt the greens as it cooks.
  5. Prepare sauce: In a medium bowl, combine the green onion cream cheese, chicken broth, and olive oil. Whisk until the mixture is smooth and well combined.
  6. Add sauce and bake covered: Pour the creamy sauce evenly over the layered chicken, mushrooms, and spinach. Cover the dish loosely with foil (do not seal tightly to allow steam to escape) and bake in the preheated oven for 20 minutes.
  7. Bake uncovered: Remove the foil and continue baking for another 20 minutes to allow the chicken to cook through and the flavors to meld.
  8. Add cheese and finish baking: Sprinkle the shredded mozzarella cheese evenly over the casserole. Return to the oven and bake for an additional 5-10 minutes until the cheese is melted, bubbly, and golden.
  9. Serve: Remove from the oven and let sit for a few minutes before serving hot. Enjoy this creamy, savory low-carb chicken casserole!

Notes

  • Use thin-sliced chicken breasts for even cooking; thicker cuts may require longer baking time.
  • Fresh baby spinach adds vibrant color and nutrition; you can substitute with frozen spinach, thoroughly thawed and drained.
  • For a dairy-free version, substitute the cream cheese and mozzarella with suitable alternatives.
  • Adjust seasoning to taste, adding more herbs or spices if desired.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
