- 1 pound ground beef
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 2¼ cups beef broth
- 1 (10 oz) can Rotel (diced tomatoes and green chilies)
- 2 tablespoons tomato paste
- 1½ cups long-grain white rice (dry, uncooked)
- 2 cups shredded cheese (any variety)
- Brown Beef and Onions: In a large skillet over medium-high heat, warm the olive oil. Add ground beef and finely diced onion to the skillet. Cook and crumble the beef until no longer pink and onions are translucent, about 8 to 10 minutes. Drain excess grease from the pan.
- Add Seasonings: Stir in the minced garlic and taco seasoning packet to the cooked beef mixture. Cook for an additional 30 seconds to release the flavors.
- Add Liquids and Rice: Pour in beef broth, Rotel, and tomato paste into the skillet. Stir until well combined and bring the mixture to a boil. Once boiling, stir in the uncooked rice and bring back to a boil.
- Simmer: Cover the skillet with a lid and reduce heat to medium-low or low. Allow the rice and beef mixture to simmer gently for 15 minutes, or until the rice is cooked through and liquid is absorbed.
- Add Cheese: Evenly sprinkle shredded cheese over the top of the cooked mixture. Cover and cook for another 5 minutes, or until the cheese is fully melted and bubbly.
