  • 1 cup shredded mild cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • 1 cup cooked bacon pieces (divided into 1/2 cup for cooking, 1/2 cup for garnish)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Sauté the Aromatics: Heat 1 tablespoon of extra virgin olive oil in a medium skillet over medium heat. Add the diced jalapeños, the white parts of the sliced green onions, and the minced garlic. Sauté for 2 to 3 minutes until the vegetables are tender and fragrant. Once done, set the mixture aside.
  2. Prepare the Slow Cooker: Spray the inside of a 2-3 quart slow cooker with non-stick spray to prevent sticking and make cleanup easier.
  3. Combine and Cook the Dip: Add the cubed cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese, sour cream, 1/2 cup of cooked bacon pieces, salt, black pepper, and the sautéed jalapeño mixture from Step 1 into the prepared slow cooker. Cover and cook on low for 2 hours, stirring every 30 minutes and scraping the bottom to prevent burning. The mixture should be fully melted and smooth by the end. Taste and adjust the seasoning with an additional pinch of salt if desired.
  4. Finish and Serve: Once the dip is smooth and hot, top it with the green parts of the sliced green onions, the remaining 1/2 cup cooked bacon pieces, and extra shredded mild cheddar cheese if desired. Serve immediately with your favorite dippers such as tortilla chips, crackers, or fresh vegetables.
