Dry Ingredients
- 1 cup quick oats
- 1 cup yellow or white corn meal
- 1 cube beef stock, crumbled (preferably real meat-based)
- 2 cups whole wheat flour
- 1 cup shredded cheddar cheese
Wet Ingredients
- 1/2 cup very warm water
- 1/2 to 1 cup additional water, as needed
- Preheat: Preheat your oven to 350 degrees Fahrenheit. Line a large baking sheet with parchment paper. Depending on the biscuit cutter size, you may need more than one baking sheet.
- Soften the Oats: In a large bowl, combine the quick oats, cornmeal, and crumbled beef stock cube. Add 1/2 cup of very warm water and stir well. Let this mixture sit for 10 to 15 minutes so that the oats soften. The water does not have to be fully absorbed, but the oats should be soft to the touch.
- Mix Dough: Stir in the whole wheat flour and shredded cheddar cheese into the oat mixture. Gradually add additional water, between 1/2 to 1 cup, a little at a time, until the mixture forms a rollable dough. The dough should not be too wet or sticky but firm enough to roll out.
- Roll and Cut: Lightly flour a clean surface and roll out the dough to approximately 1/4-inch thickness. Using a medium dog bone-shaped biscuit cutter (about 3 inches long), cut out the biscuits. This recipe yields about 30 biscuits.
- Bake: Arrange the cut biscuits on the prepared baking sheets. Bake the biscuits in the preheated oven for 30 to 35 minutes.
- Dehydrate for Storage: After baking, turn off the oven but leave the biscuits inside. Let them sit in the oven until it has completely cooled. This step dehydrates the biscuits, giving them a crunchy texture and improving their shelf life for storage.
