Ingredients

Scale

Meatballs

  • 1 lb Ground Beef (Can substitute with ground turkey for a leaner option.)
  • 1 lb Ground Pork (Substitute with more ground beef if preferred.)
  • 1 large Egg (Acts as a binder.)
  • 1 cup Ricotta Cheese (Substitute with cream cheese for a different flavor.)
  • 1/2 cup Parmesan Cheese (Nutritional yeast can be used for a dairy-free option.)
  • 1 tsp Garlic Powder (Fresh minced garlic can be used for more intensity.)
  • 1 tbsp Italian Seasoning (Customizable with your choice of herbs.)
  • 1 tsp Salt (Adjust according to preference.)
  • 1 tsp Pepper (Adjust according to preference.)
  • 1 cup Pork Rind Crumbs (An alternative for breadcrumbs in low-carb diets.)

Sauce

  • 1 cup Heavy Cream (Substitute with coconut cream for a dairy-free version.)
  • 4 tbsp Unsalted Butter (Olive oil can be a healthier alternative.)
  • 2 cloves Minced Garlic (Fresh option for a stronger garlic flavor.)
  • 1 tsp Paprika (Omit if undesired.)
  • Fresh Basil (Optional garnish; omit if unavailable.)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 400°F (200°C) and grease a 10×13-inch baking dish to prevent sticking and prepare it for baking the meatballs.
  2. Mix Meatball Ingredients: In a large bowl, combine the ground beef, ground pork, egg, ricotta cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix thoroughly to evenly distribute all ingredients.
  3. Coat and Arrange Meatballs: Shape the mixture into meatballs, then coat each meatball evenly with pork rind crumbs. Place the coated meatballs in the prepared baking dish spaced slightly apart.
  4. Bake Meatballs: Bake the meatballs in the preheated oven for 20 minutes, or until they are browned on the outside and fully cooked through inside.
  5. Sauté Garlic for Sauce: While the meatballs are baking, melt the butter in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  6. Make Cream Sauce: Stir the heavy cream into the skillet with garlic and butter. Season with additional salt, pepper, and paprika if using. Let the sauce simmer gently until it thickens slightly, stirring frequently.
  7. Combine Meatballs and Sauce: Once the meatballs are done baking, transfer them into the skillet with the creamy sauce. Gently stir to coat each meatball thoroughly with the sauce.
  8. Garnish and Serve: Optionally, garnish with fresh basil leaves before serving for a burst of fresh flavor and color.

Notes

  • Substitute ground turkey for beef if you prefer a leaner meat option.
  • Use cream cheese instead of ricotta for a richer flavor in meatballs.
  • For dairy-free versions, replace Parmesan with nutritional yeast and heavy cream with coconut cream.
  • Pork rind crumbs are a great low-carb breadcrumb alternative.
  • Adjust salt and pepper seasoning to your taste preference.
  • Fresh garlic can replace garlic powder in the meatball mix for a stronger flavor.
  • Omit paprika from the sauce if you prefer no added spice or color.
  • Use olive oil instead of butter for a healthier fat alternative in sauce preparation.
