Ingredients

Scale

Chicken

  • 4 large skinless boneless chicken breasts
  • 4 tsp Cajun seasoning
  • 2 tbsp butter

Vegetable Filling

  • 1 tbsp olive oil
  • 4 large mushrooms, sliced
  • 1/2 red bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • 1/4 medium white onion, diced
  • Pinch of Cajun seasoning

Cheese

  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the stuffed chicken breasts.
  2. Prepare Chicken Pockets: Using a sharp knife, carefully cut a pocket into the side of each chicken breast. Rub each breast with Cajun seasoning to infuse flavor, then set them aside.
  3. Sauté Vegetables: Heat olive oil in a large pan over medium heat. Add the diced onion, red and yellow bell peppers, and sliced mushrooms. Cook for 5-6 minutes until the vegetables soften slightly. Season with a pinch of Cajun seasoning to enhance the taste.
  4. Stuff the Chicken: Spoon the sautéed vegetable mixture evenly into each chicken breast pocket. Top each with a generous amount of shredded mozzarella cheese. Secure the opening of each pocket with toothpicks to keep the filling inside during cooking.
  5. Prepare for Baking: Lightly grease a 9×13-inch baking dish and place the stuffed chicken breasts inside. Add a teaspoon of butter on top of each chicken breast to keep it moist and add richness.
  6. Bake: Bake the stuffed chicken breasts uncovered in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

Notes

  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C) before serving.
  • To prevent the filling from leaking, secure the chicken pockets well with toothpicks.
  • Feel free to adjust Cajun seasoning to your preferred spice level.
  • Serve with a side of steamed vegetables or a fresh green salad for a balanced meal.
  • Butter can be substituted with olive oil for a lighter option.
