This Bruschetta Chicken Casserole is a savory, comforting dish combining tender chicken pieces with fresh tomatoes, garlic, basil, and melted mozzarella cheese. Inspired by classic bruschetta flavors, it offers an easy-to-make, oven-baked meal perfect for weeknight dinners or gatherings. The vibrant topping of fresh basil and balsamic drizzle adds a bright finish to this hearty casserole.

Ingredients

Scale

Chicken

  • 1 lb. chicken breasts or tenders, cut into bite-sized pieces
  • 1 Tbsp avocado oil or olive oil
  • Sea salt and ground black pepper, to taste (about 1/4 teaspoon each)

Bruschetta Topping

  • 6 ripe Roma tomatoes, chopped and lightly sprinkled with sea salt
  • 3 fresh garlic cloves, crushed or chopped
  • 1 tsp dried oregano
  • 2 Tbsps high quality balsamic vinegar
  • A small handful of fresh basil leaves, chopped

Cheese

  • 1 cup shredded mozzarella cheese

Additional

  • Cooking spray (for greasing the baking dish)

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the casserole.
  2. Cook Chicken: Heat the oil in a skillet over medium-high heat. Add the chicken pieces and season them with sea salt and fresh ground black pepper. Cook, stirring occasionally, until the chicken is golden brown on the sides and nearly cooked through.
  3. Assemble Casserole: Transfer the cooked chicken to an 8×8-inch baking dish that has been sprayed or brushed with oil to prevent sticking. Evenly top the chicken with chopped tomatoes, dried oregano, crushed garlic, and drizzle the balsamic vinegar over the mixture.
  4. Add Cheese: Sprinkle the shredded mozzarella cheese evenly on top of the tomato and chicken mixture.
  5. Bake: Place the uncovered casserole in the preheated oven and bake for 18-20 minutes, just until the cheese is melted and bubbly, and the sauce is simmering in the bottom of the dish.
  6. Rest and Garnish: Remove the casserole from the oven and cover it. Let it rest for 5 minutes to allow the flavors to meld and the dish to settle. Garnish with fresh chopped basil before serving.

Notes

  • Use ripe Roma tomatoes for the best flavor and texture.
  • Avocado oil or olive oil can be used interchangeably for cooking.
  • For a spicier kick, add red pepper flakes to the topping.
  • You can substitute mozzarella with a blend of Italian cheeses for a richer flavor.
  • Allowing the casserole to rest after baking enhances the flavors and makes serving easier.
  • Use a high-quality balsamic vinegar for the best taste contrast.
