Salmon and Marinade
- 4 skinless salmon fillets, 6 oz. each
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 2 tablespoons old style Dijon mustard
- Salt and ground black pepper, to taste
- 1 tablespoon fresh chopped parsley (optional)
- Lemon slices, for serving (optional)
Sauce
- 2 tablespoons unsalted butter
- 2/3 cup chicken stock
- 1 x 5 oz. pack Boursin Garlic & Herbs Cheese (at room temperature)
- 1–2 tablespoons freshly squeezed lemon juice
- Preheat Oven: Preheat your oven to 425°F (220°C) and lightly grease a baking dish to prepare it for the salmon.
- Prepare Salmon: Pat the salmon fillets dry with a paper towel. In a small bowl, combine lemon juice, olive oil, minced garlic, and Dijon mustard. Place the fillets in the baking dish and rub them thoroughly with the marinade mixture. Season with salt and black pepper generously.
- Bake Salmon: Bake the salmon in the preheated oven for 10-12 minutes or until the fillets are cooked through and flaky.
- Make Sauce Base: While the salmon is baking, melt the unsalted butter in a small pot over medium heat.
- Add Stock and Cheese: Pour in the chicken stock and blend in the Boursin Garlic & Herbs cheese until fully incorporated. Let the sauce simmer gently for a few minutes, allowing it to thicken slightly.
- Finish Sauce: Remove the pot from heat and stir in 1-2 tablespoons of freshly squeezed lemon juice to brighten the flavor.
- Serve: Drizzle the warm Boursin sauce over the baked salmon fillets in the dish, mixing it with the natural juices released from the salmon during baking.
- Garnish: Sprinkle fresh chopped parsley over the salmon for an optional fresh finish.
- Enjoy: Serve the salmon with lemon slices on the side and enjoy your flavorful meal!
Notes
- Make sure the Boursin cheese is at room temperature so it blends smoothly in the sauce.
- For a dairy-free version, substitute the butter with olive oil and use a dairy-free cream cheese alternative.
- You can add a side of steamed vegetables or a fresh green salad to complement this dish.
- Salmon can be substituted with other firm fish fillets like cod or halibut if desired.
- Adjust lemon juice in the sauce to taste, adding more for a tangier flavor.
