  • 1½ cups vegetable broth
  • 1 tablespoon fresh lime juice (plus lime wedges for serving)

Instructions

  1. Sauté Vegetables: Heat the olive oil in a large pot or Dutch oven over medium heat. Add diced onion, celery, carrot, sea salt, and freshly ground black pepper. Cook, stirring occasionally, for 10 to 15 minutes until the vegetables are soft and fragrant.
  2. Add Spices and Beans: Stir in the minced garlic, ground cumin, ground coriander, and chili powder. Cook for 30 seconds to release their aromas. Then add the black beans with their liquid, chopped chipotle peppers, adobo sauce, and vegetable broth. Stir to combine well.
  3. Simmer Soup: Bring the mixture to a gentle simmer and cook uncovered for 30 minutes so the flavors meld together and the soup thickens slightly.
  4. Blend Soup: Remove from heat and allow the soup to cool slightly. Transfer half of the soup to a blender and puree until smooth, then return it to the pot with the remaining soup. Alternatively, use an immersion blender to puree half the soup directly in the pot. This step creates a creamy yet textured consistency.
  5. Finish and Serve: Stir in fresh lime juice and adjust seasoning to taste. Serve hot with lime wedges and your choice of optional toppings such as avocado slices, cilantro, sour cream, pickled onions, serrano peppers, or pepitas.
