Ingredients

Scale

Rice and Broth

  • 1 cup uncooked long-grain white rice
  • 3 cups low sodium beef broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Beef and Vegetables

  • 1 lb ground beef
  • 1 small onion, diced
  • 4 garlic cloves, minced

Cheese Sauce

  • 3 tbsp butter (divided: 1 tbsp for sautéing, 2 tbsp for cheese sauce)
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese

Garnish

  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Cook Onion: Melt 1 tablespoon of butter in a large skillet over medium heat. Add the diced onion and sauté for 3 to 4 minutes until softened and translucent.
  2. Brown the Beef: Add the ground beef to the skillet with the onions. Cook while breaking up the meat until it’s browned and no longer pink. Drain any excess fat from the pan.
  3. Garlic Time: Stir in the minced garlic to the skillet and cook for about 1 minute until fragrant.
  4. Mix in Rice and Broth: Add the uncooked rice, beef broth, Italian seasoning, salt, and pepper to the skillet. Stir everything together thoroughly to combine.
  5. Simmer Away: Increase heat to bring the mixture to a boil. Then reduce to low, cover with a lid, and simmer for 18 to 20 minutes, or until the rice is tender and has absorbed most of the broth.
  6. Create Cheese Sauce: While the rice cooks, melt 2 tablespoons of butter in a small saucepan over low heat. Stir in the grated Parmesan, shredded cheddar, and milk, continuously stirring until the cheese melts and the sauce is creamy and smooth.
  7. Blend Everything Together: Pour the cheese sauce into the skillet with the cooked beef and rice mixture. Stir gently to combine all ingredients evenly.
  8. Final Touch: Cook the combined mixture uncovered for 2 to 3 minutes to let the flavors meld together. Garnish with chopped fresh parsley if desired. Serve warm.

Notes

  • Use low sodium beef broth to control the saltiness of the dish.
  • Drain excess fat from the browned beef to reduce grease and keep the dish rich but not oily.
  • For a creamier texture, you can substitute whole milk or add a splash of cream in the cheese sauce.
  • Fresh parsley adds a pop of color and fresh flavor, but it’s optional.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
