Ingredients

Scale

Chicken

  • 60 g shredded chicken breast (about 1/2 cup, cooked using instant pot method)
  • 3 tablespoons BBQ sauce

Sweet Potato Toast

  • 184 g sweet potato (1 small, sliced)
  • Spray oil
  • Salt and pepper, to taste

Cottage Cheese Bowl

  • 180 g low-fat cottage cheese (3/4 cup)
  • Salt and pepper, to taste

Instructions

  1. Prepare Sweet Potato Toast: Spray the sliced sweet potato with a light coating of oil and season with salt and pepper to taste. Place the slices in a toaster or toaster oven and toast until soft. Alternatively, air fry the slices at 200°C (400°F) for 10 minutes, flipping halfway through to ensure even cooking.
  2. Warm and Mix BBQ Chicken: Warm the shredded chicken in the microwave for 30 seconds to 1 minute until heated through. In a bowl, mix the warm shredded chicken with 3 tablespoons of BBQ sauce until evenly coated.
  3. Assemble the Cottage Cheese Bowl: Place the low-fat cottage cheese in a serving bowl. Season with salt and pepper if desired. Top the cottage cheese with the BBQ chicken mixture. Slide the toasted sweet potato slices into the bowl alongside the cottage cheese and chicken.
  4. Optional Serving Suggestion: For added flavor, add a spoonful of cottage cheese on a sweet potato slice, top with some BBQ chicken, or chop the sweet potato slices and mix all ingredients together before enjoying.

Notes

  • You can use freshly shredded chicken from an instant pot or substitute with pre-cooked store-bought shredded chicken.
  • If you don’t have a toaster or toaster oven, air frying the sweet potatoes produces excellent results.
  • Adjust the amount of BBQ sauce to your taste preference or use a low-sugar BBQ sauce for a healthier version.
  • This recipe can be served warm or at room temperature depending on your preference.
  • For a dairy-free option, substitute cottage cheese with a vegan alternative or Greek yogurt if dairy is acceptable.
