This comforting Apple Crisp with Oats combines the tartness of Granny Smith and the sweetness of Honeycrisp apples with a crunchy oat topping. It’s a perfect dessert for cozy nights, featuring warm spices and a buttery, crumbly crust that pairs beautifully with vanilla ice cream or whipped cream.

Ingredients

Scale

Apple Filling

  • 67 medium apples (Granny Smith and Honeycrisp blend)
  • 1/4 cup granulated sugar
  • 1 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice

Crisp Topping

  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp fine salt
  • 1/2 cup (1 stick) cold unsalted butter, cubed

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Prepare a 9×9-inch baking dish or similar pie plate; no need to grease the dish.
  2. Prepare Apple Filling: Peel, core, and slice the apples into 1/4-inch thick slices. Toss the sliced apples with lemon juice, granulated sugar, flour, cinnamon, and nutmeg until well coated. Spread this mixture evenly in the baking dish.
  3. Make Crisp Topping: In the same bowl, whisk together the rolled oats, all-purpose flour, brown sugar, baking powder, cinnamon, and salt. Cut in the cold, cubed butter using forks or your fingers until the mixture resembles coarse crumbs.
  4. Assemble: Evenly sprinkle the crisp topping over the apples in the dish, making sure not to press it down to keep it crumbly and light.
  5. Bake: Place the dish in the oven and bake for 40–45 minutes, or until the topping is deeply golden brown and the apple filling is bubbling.
  6. Rest and Serve: Allow the apple crisp to rest for 15–20 minutes after baking so the juices thicken. Serve warm, optionally topped with vanilla ice cream or whipped cream for an extra treat.

Notes

  • Use a mix of tart and sweet apples like Granny Smith and Honeycrisp for balanced flavor and texture.
  • Do not press the crumble topping down to keep it crisp and crumbly after baking.
  • Letting the dish rest after baking helps the juices to thicken for a better serving consistency.
  • Optional toppings like vanilla ice cream or whipped cream complement the warm spices and texture.
  • The baking dish does not need to be greased; butter in the topping provides enough richness.
