  • 1/3 cup raw cane sugar, 67g (use any sweetener and adjust amount to your liking)
  • 7g gelatin powder, or one packet (I use the Organika Bovine Gelatin)
  • 1 tbsp espresso powder, 5g (any instant coffee)
  • 2 cups plain Greek yogurt, 480g
  • 1 tsp vanilla, 4g
  • Pinch of salt
  • Optional: 1 scoop vanilla protein powder

Instructions

  1. Step 1: Add the Greek yogurt to a large measuring cup (4 cup size) to make it easy to pour the final mixture into your serving glasses.
  2. Step 2: In a saucepan, combine the milk, sugar, gelatin, espresso powder, vanilla, and salt. Heat the mixture gently and bring to a simmer while stirring to dissolve the sugar and coffee powder completely.
  3. Step 3: Remove the saucepan from heat and let the mixture cool for 2–3 minutes before pouring it into the Greek yogurt.

  5. Step 5: Divide the combined mixture evenly into four serving glasses.
  6. Step 6: Refrigerate for 3–4 hours or until the jello is completely set.
