Ingredients

Scale

Main Ingredients

  • 1 pound ground beef
  • 2 (14.5-ounce) cans beans, rinsed and drained (half kidney beans, half pintos recommended)
  • 2 (14.5-ounce) cans fire-roasted diced tomatoes with green chiles
  • 1 (14.5-ounce) can tomato sauce
  • 1/4 cup (4 tablespoons) taco seasoning, homemade or store-bought

Optional Toppings

  • Shredded cheese
  • Sour cream
  • Chopped green or red onions
  • Diced avocado
  • Crushed tortilla chips

Instructions

  1. Brown the beef: In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned, breaking it apart with a wooden spoon as it cooks. Drain excess grease if necessary to keep the chili from being too oily.
  2. Simmer the chili: Add the rinsed beans, fire-roasted diced tomatoes with green chiles, tomato sauce, and taco seasoning to the pot with the browned beef. Stir well to combine all ingredients evenly. Bring the mixture to a gentle simmer, then reduce the heat to medium-low.
  3. Cook and meld flavors: Cover the pot and let the chili simmer for 5 to 15 minutes, stirring occasionally. This allows the flavors to meld together and the chili to thicken slightly. If you have more time, simmering longer will deepen the flavor.
  4. Season to taste: Taste the chili and adjust seasoning if needed, adding salt or more taco seasoning according to your preference.
  5. Serve: Spoon the chili into bowls and top with your favorite optional toppings like shredded cheese, sour cream, chopped onions, diced avocado, or crushed tortilla chips. Enjoy warm for a comforting meal.

Notes

  • If using Ro*Tel brand tomatoes instead of fire-roasted diced tomatoes with green chiles, it will add a slightly different flavor and heat level—adjust seasoning accordingly.
  • Draining excess fat after browning the beef helps prevent the chili from becoming greasy.
  • You can substitute ground turkey or chicken for a leaner version of this chili.
  • Simmering the chili longer than 15 minutes can intensify the flavors, so feel free to cook it up to an hour on low heat if time allows.
  • To make this recipe gluten free, ensure your taco seasoning does not contain gluten-containing ingredients.
